Now, the chef is preparing to launch a new restaurant in the Miami market, opening in the thriving Wynwood neighborhood. Called Novatore Cucina and Bar in honor of the chef’s grandfather, the new restaurant will offer a menu bringing together classic Roman cuisine with the spirit of contemporary culinary creativity.

“Novatore is more than a restaurant; it’s a place where Italian tradition and culinary innovation meet,” says a Spanish-language brochure provided to What Now by Gabriel Mendelzon, who, together with Marcello Marocchino, is launching the restaurant alongside Chef Bernardi. (The translation is ours.) “We focus on seasonal cuisine with high-end Italian products and an experience that goes beyond the visual and gustatory, offering service of the highest quality.”

The brochure tells the story of Chef Bernardi’s grandfather Novatore, “a man for whom food and company were more important than money.” That’s the guiding principle for Novatore Cucina & Bar: “This restaurant seeks to recreate the warmth and closeness of those family meals, bringing together traditional recipes with contemporary techniques, always maintaining the highest of standards of world cuisine.”

The restaurant’s interior also brings together the traditional and the modern, with a design “inspired by the curves of the Coliseum and Circus Maximus.” The space will feature both communal and private dining areas, all made with “authentic materials like wood, marble, and terracotta, evoking Italian elegance. By day, the atmosphere is relaxed, ideal for informal meals. By night, Novatore converts into an intimate space perfect for dinners accompanied by wine and signature cocktails.”

The design and construction and process are underway, and Gabriel Mendelzon tells What Now that Novatore Cucina & Bar is working toward an opening at the end of February.
