Will Thompson and Carey Hynes, the restaurateurs behind Jaguar Sun, are partnering up with Valentino Longo, winner of Bombay Sapphire’s Most Imaginative Bartender distinction, to launch a new Italian Aperitivo bar in Downtown Miami. The new bar, called ViceVersa, will open in 2024, according to recent coverage by TimeOut.
“ViceVersa will be a modern aperitivo bar featuring Italian spirits, vermouths, bitters and amaros shaken and stirred with unexpected ingredients,” says the TimeOut coverage.
A few signature cocktails have already been revealed, like a dry martini with Bombay Premier Cru, Cocchi dry vermouth, dry sherry, marsala and an Italian herbal liqueur called cent’erbe. Another is the “Brucio in Bocca”: “a twist on a spicy margarita featuring Barolo wine and marmalade, Cocchi vermouth torino and tequila.”
What Now reached out to Will Thompson on Friday to inquire about plans for ViceVersa’s opening. Thompson was not immediately available for comment.
