Floza Bringing Sourdough Craft Pizza to Palm Beach Gardens

The new pizza spot will open at Mirasol Walk

Situated on PGA Boulevard alongside the Florida Turnpike in Palm Beach Gardens, Mirasol Walk will soon welcome a new craft pizza concept into its restaurant and retail community. Floza Craft Pizza will open in business center, at 6271 PGA Blvd., Unit 207, according to a submitted plan review.

“It’s going to be wood-fired sourdough pizza—Napolitan-style, of course,” owner Erwin Toribio told What Now on Friday. “We don’t use commercial yeast; it’s a naturally fermented and raised leavening. That’s much more digestible that the commercial yeast everyone has a reaction to.”

Toribio is opening Floza in collaboration with business partner Edward Sherwood. The two restaurateurs have about 30 years’ combined experience, with a collective CV that ranges from pizza innovation (Toribio was part of a team that created an award-winning pizza menu at Grato) to New York fine dining.

Toribio says pizza varieties will include both tried-and-true classics, along with innovative and trendy seasonal flavor profiles that will depend on the fresh ingredients available from local farmers and other producers at a given time. In addition to a seasonal menu, Floza will serve beer in wine, all in a space that seats just over 32 people, with some additional outside seating.
