Wine and Small Bites Concept Opening in May

South Florida couple is bringing French traditions to Hollywood.

Champagne Shack is coming to the area by way of Stephen Eisel and Ysée Gaudel. Inspired from the French cave à manger tradition, the concept will be equal parts a wine shop, a tasting bar and small bites restaurant.

According to Eisel, the concept will appear at 219 N 21st Street Avenue, and he estimates that they will have the doors open by May. Currently, the space is undergoing its build-out. 

The cave á manger inspiration rose from a movement in France of small wine cellars that are permitted to serve wine to their patrons under the condition that they order food. So, in most cases, the proprietors will serve charcuterie boards and similar other plates. 

To provide a genuine experience, Eisel and Gaudel will serve natural, raw wine that is unfiltered and unrefined. They hope to serve drinks that are free of additives and possess their full natural flavors.

The wine selection will be carefully curated by Gaudel, who is a master sommelier, and the charcuterie boards will be in Eisel’s hands, as he is a certified cheese professional. 

The cave á manger concept has been prominent in Paris and has recently spread to New York. Now, Eisel and Gaudel are bringing south Florida their rendition of it with the Champagne Shack.
