Founded by Ike Grigoropoulos, Chef Dimitri Moshovitis, and Ted Xenohristos, CAVA offers modern Mediterranean food at a growing network of restaurants that now encompasses more than 320 locations. As the brand continues on its growth path, it appears to have a new location in store for South Florida. Plan review paperwork shows a new CAVA location planned for 3684 W 84th St #5 in Hialeah.

CAVA’s menu of Mediterranean cuisine is built around its bowls and pitas. Bowls include Balsamic Date Chicken (Grilled chicken, eggplant dip, red pepper hummus, corn, brown rice, spinach, balsamic date vinaigrette) and the Lentil Avocado Bowl (Falafel, roasted veg, roasted eggplant, hummus, avocado, lentil, tabbouleh, spinach, SuperGreens, skhug). Pitas, on the other hand, come in varieties like Sweet + Spicy Chicken, Crispy Falafel, and Spicy Lamb Meatball.

“CAVA is grounded in the Mediterranean way of life, where food is at the center of culture and connection,” says the CAVA website’s Our Story page. “It’s not only about the food, though. CAVA’s inspiration is rooted in the entire Mediterranean meal experience, notably that feeling-so-cared-for genuine expression of hospitality and warmth. Which is why, at CAVA, generosity is our cornerstone.”

Situated alongside I-75, the new CAVA would join restaurants like Happy Vegan Bakers Cafe and Franky’s Deli Warehouse.

What Now reached out to co-founder and CEO Brett Schulman on Tuesday to inquire about plans for a Hialeah CAVA location. Schulman could be reached immediately for comment.
