Jupiter’s Soul Rebel Is Expanding with West Palm Beach Location

The healthy-living brand is bringing smoothies, acai bowls, salads, grain bowls, and more to Palm Beach Atlantic University

Born as a juice bar serving up cold-pressed juices, smoothies, and acai bowls, Jupiter-based healthy restaurant Soul Rebel wanted to revamp its menu offerings.

“As the years passed, it became obvious that the market has become a bit over-saturated,” owner Drew Thompson told What Now on Friday. “We also had customers requesting things over the years, and it made sense to lean into what there was demand for, which was a more substantial meal.”

And so Soul Rebel partnered with Washington D.C.-based chef Chris Morgan to revamp the menu. Now, in addition to its selection of acai bowls and smoothies, you’ll also find heartier grain bowls. They come in varieties like The Greatest Farro (green goddess dressing, farro, squash, beets, kale, red cabbage, avocado, pecorino) and the Soul Bowl (peanut chile dressing, farro, spinach, red cabbage, avocado, broccoli, peanuts, carrots, hard-boiled egg). There are also salads like the Field Trip (spicy mustard vinaigrette, spinach, arugula, red cabbage, cauliflower rice, peas, broccoli, pickled red onion) and the Nirvana (turmeric-cashew dressing, arugula, spinach, red cabbage, broccoli, beets, carrots, red onion).

All Soul Rebel’s sauces and dressings are made in-house from scratch.

“People are starting to realize the importance of the quality of what you put into your body, especially after the health panic of the last few years,” Thompson said. “It’s all about being able to do it in a way that is quick, convenient, and affordable, and that can easily become part of somebody’s routine.”

With its newly updated menu, the brand is now looking to expand, and it’s starting in West Palm Beach, where it will open a new location at 900 Federal Highway, on the Palm Beach Atlantic University campus.

“The way we go about things is different,” Thompson said. “We’re about creating a positive work environment where people can enjoy going to work, a culture of kindness and caring. And to me, that’s the most exciting part of scaling, being able to introduce the brand to other communities that can benefit from something like this, to impact the community in a positive way on a regular basis. It’s been an incredible success from so many different angles that I never thought were possible.”
