Edan Bistro, the brainchild of Chef Aitor Garate Berasaluze, is set open its doors on Thursday, November 16. Located in North Miami (650 NE 125th street), Edan Bistro combines various culinary experiences into one space offering something for everyone. From casual and breakfast and European-style brunch to thoughtfully curated tasting menus for dinner, the restaurant’s versatile offerings marry innovation with tradition.

An accomplished chef at just 29 years old, Chef Aitor is best known in the Miami community for his concept inside the South Beach Food Hall (formerly Time Out Market), LUR. Prior to LUR, he worked his way up in the industry starting his studies at Bilbao Higher School of Hoteliers and Restaurateurs while working on the family farm and later going on to become head of the Meat Department at Azurmendi, a 3 Michelin star restaurant in Spain. His passion for his native Basque cuisine then led him to Basking Food, where he promoted this style of food across Europe. After this, Chef Aitor’s passion found its ultimate expression when he joined Asador Etxebarri, ranked among one of the world’s best restaurants, where he served as head sommelier and contributed to culinary innovation, solidifying his love for fire-cooking.

Edan Bistro will be Chef Aitor’s first brick and mortar restaurant. The 36-seat restaurant’s offerings will include breakfast, an all-day brunch menu and dinner. Tasting menu options will be offered during dinner with a brunch tasting menu in the works for post-opening. With Chef Aitor’s expertise as a sommelier, he has curated a wine list featuring exciting and special wines at reasonable prices.

“For me, culinary artistry is more than a profession; it’s a symphony of passion and precision. Each plate I create reflects not just my skills, but a deep love for the rich Basque culinary heritage,” says Chef Aitor in astatement. “Opening my first restaurant, Edan Bistro, is a dream realized and I cannot wait to share my love for the art of gastronomy and the flavors of Basque cuisine while creating unforgettable dining experiences for our guests.”

Breakfast menu highlights include a variety of toasts, egg dishes, croissants, sandwiches and pastries with highlights including: Iberico Ham & Grated Tomato sandwich ($17); Leek & Bacon Quiche with smoked bacon, mixed greens and mustard vinaigrette ($12.50); Salmon & Truffle Spinach croissant ($9); and Eggplant & Jalapeño toast on sourdough with caramelized onions, cilantro and olive oil ($13.50). The all-day menu has an assortment of items, priced between $19-25, inspired by European-style brunch dishes, with standouts including Mushroom Croquetas with black garlic emulsion and smoked shiitake; Gambas al Ajillo Salad with potato & egg salad, prawns and chipotle mayo; Mini Brioche Bun & Caviar with toasted brioche and brown butter; and Steak tartare with croissant toast, hazelnut emulsion, micro greens and pickled onions. A traditional Basque Cheesecake ($12) will also be available.

For dinner, Chef Aitor will offer an 8-course tasting menu priced at $100 per person. The menu will rotate on a monthly basis and include seasonal ingredients. The special experience will be available nightly for dinner until 9pm. Accommodations for dietary restrictions and allergies will be offered as well.

Edan Bistro will be located at 650 NE 125th Street in North Miami. The restaurant will be open Thursday through Monday from 8AM until 10 PM offering breakfast, all-day brunch and dinner upon opening on November 16, 2023.
