Pigtastic Eats Food Truck to Open to Launch in Miami

The retail center at the intersection of Southwest 152nd Avenue and Southwest 121st Avenue is the first home of Pigtastic Eats, a new food truck from local barbecue aficionado Eric Bush and his family.

“My friends and family have been encouraging me for a long time to do something like this,” Bush told What Now on Friday. “I was working at the resource recovery facility that burned down back in February, and I took it as a sign to move and do something I’ve always wanted to do.”

The Pigtastic Eats menu will feature a Texas-style brisket, Georgia-style ribs, and pulled pork with a North Carolina-inspired sauce. Bush says it’s an eclectic mix.

“There’s no one style for my barbecue; it’s a good mixture of different places I’ve been.”

Sides include Potato Salad, Coleslaw, Baked Beans, and Mac and Cheese. Also on offer are Pulled Pork and Pulled Chicken sandwiches.

“And once we get going, we’ll venture out from that,” Bush adds. “There will be days for smoked oxtails. Other days we’ll do a fantastic smoked salmon. If you can cook it in an oven, I can smoke it.”
