Ah-Beetz Expanding with More New Haven Pizza in Palm Beach County

The brand has three new locations in the works

As New Haven pizza increases in popularity and visibility across the country, Delray Beach’s Ah-Beetz New Haven Pizza, located at 15200 Jog Road, is preparing to launch a major expansion in Palm Beach County. The restaurant, which prepares its pizzas (and its increasingly popular thrice-fired wings) in a proprietary coal-fired brick oven that reaches temperatures as high as 750 or even 800 degrees, is launching locations in West Palm Beach, Lake Park, and Royal Palm Beach.

“New Haven pizza involves a specific dough process of rise, proof, and ferment that takes place over 48 hours,” a representative told What Now on Tuesday. “We have a unique sauce recipe that uses California canned tomatoes—and also unique is our ratio of sauce to cheese, using both mozzarella and real Pecorino Romano, not ‘parmesan.’”

Cooked in the Ah-Beetz oven at insanely high temperatures, the apizza also takes on its distinctive char, through a process (the representative explained) in which the high heat brings the ingredients’ naturally occurring sugars to the surface and caramelizes them.

In its Delray location, the brand’s biggest sellers are its straight-shooting Traditional Mootz Apizza, with tomato sauce, mozzarella (mootz), Pecorino Romano, and oregano, along with its wings, which are baked (and never, ever fried) three times in the super-hot oven and served up with Original, Hot, or Barbeque sauces.

Founded by Nick Laudano, Sr., the culinary force behind longtime favorite Nick’s New Haven Pizza, Ah-Beetz comes out of a New Haven-reared background with deep ties to Florida, and it shows: the brand is expected to launch in West Palm Beach within the next two weeks, in Lake Park within the next ten, and, a bit later, in Royal Palm Beach.
